For the Salad
  • 1 cup Cherry Tomatoes Halved
  • 0.5 small Red Onion Finely diced
  • 2 Avocados Diced
  • 1 tablespoon Fresh Lime Juice Can substitute with lemon juice
  • 2 tablespoons Extra Virgin Olive Oil Or avocado oil
  • Sea Salt & Black Pepper To taste
  • 0.25 cup Fresh Cilantro Optional
  • 1 Jalapeño Optional, finely chopped

Method
 

Preparation
  1. Wash and dry the cherry tomatoes, then halve them and place in a mixing bowl.
  2. Finely dice the red onion and add to the bowl.
  3. If using, finely chop the jalapeño and add to the mix. Stir gently to combine.
  4. Chop the cilantro and fold it into the salad.
  5. Squeeze lime juice over the salad and drizzle with olive oil. Season with salt and pepper, then mix gently.
  6. Dice the avocados and carefully fold them into the salad.
  7. Taste the salad and adjust seasoning as needed.
  8. Serve immediately or let it rest for 10-15 minutes before serving for better flavor.
