  • 2 pieces Hass Avocado ripe, for best flavor
  • 1 piece English Cucumber or regular cucumber if needed
  • 1/4 cup Red Onion finely chopped
  • 1 cup Cherry Tomatoes halved, or substitute with grape tomatoes
  • 1/4 cup Cilantro Leaves omit if you’re not a fan
For the Dressing
  • 3 tablespoons White Wine Vinegar or apple cider vinegar
  • 3 tablespoons Olive Oil extra virgin is ideal
  • 1 piece Lime Juice fresh preferred
  • 1 tablespoon Maple Syrup or honey/agave syrup alternatives
  • 1 teaspoon Dijon Mustard or yellow mustard
  • 1 teaspoon Salt sea salt or kosher salt

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine corn, diced avocados, diced cucumber, chopped red onion, and halved cherry tomatoes. Gently mix to keep the avocados intact.
  2. In a small bowl, whisk together white wine vinegar, olive oil, lime juice, maple syrup, Dijon mustard, and add a pinch of salt.
  3. Pour the dressing over the salad mixture and gently stir until all ingredients are well combined.
