Step-by-Step Instructions for BBQ Chicken Quesadillas
  1. Shred your cooked chicken into bite-sized pieces and place it in a medium bowl. Warm the BBQ sauce in a small saucepan over low heat for about 2-3 minutes. Pour the BBQ sauce over the shredded chicken, mixing thoroughly.
  2. Take a tortilla and place it flat. Sprinkle a layer of Monterey Jack cheese on one half, evenly distribute the BBQ chicken mixture, add red onion and cilantro, and top with more cheese before folding the tortilla.
  3. Heat a non-stick skillet over medium heat. Place the quesadilla into the skillet, cooking for 3-4 minutes until golden brown. Flip the quesadilla and cook for another 3-4 minutes until the cheese is melted.
  4. Remove from skillet, let cool for a minute, and slice into quarters or sixths. Serve warm with extra BBQ sauce, sour cream, and salsa on the side.
