  • 2 tablespoons Soy Sauce or tamari for gluten-free
  • 1 tablespoon Fresh Ginger, grated or use ground ginger if needed
  • 1 tablespoon Honey or maple syrup for vegan option
  • 1 clove Garlic, minced or garlic powder as an alternative
For Garnish
  • 1 tablespoon Sesame Seeds optional garnish

Step-by-Step Instructions
  1. In a large mixing bowl, add the chickpeas, edamame, red bell pepper, carrot, and green onions. Gently toss the ingredients together.
  2. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, ginger, honey, and minced garlic until smooth.
  3. Pour the vinaigrette over the salad mixture and gently toss to coat the ingredients evenly.
  4. Sprinkle sesame seeds on top of the salad, cover, and chill in the fridge for 15-20 minutes before serving.
