  • 1 cup Sour Cream or cream cheese, heavy cream
  • 1 cup Beef Broth or vegetable broth
  • 2 tablespoons Olive Oil for sautéing
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Thyme dried
  • 1 teaspoon Paprika

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) to ensure it's ready for baking.
  2. Peel and dice the potatoes into small cubes, chop the onion finely, and mince the garlic.
  3. Heat olive oil in a large skillet over medium heat; sauté onions and garlic for 3–5 minutes until translucent.
  4. Add ground beef to the skillet, season with salt, pepper, thyme, and paprika, and cook for 7–10 minutes until browned.
  5. Pour in the beef broth and let the mixture simmer for 3–5 minutes.
  6. In a mixing bowl, combine diced potatoes with the beef mixture, and fold in sour cream and half of the cheddar cheese.
  7. Transfer the mixture to a greased baking dish, spreading evenly, and top with remaining cheddar cheese.
  8. Cover with foil and bake for 30 minutes; this helps soften potatoes and meld flavors.
  9. After 30 minutes, remove the foil and continue baking for 10–15 minutes until cheese is melted and golden.
  10. Allow the casserole to rest for about 10 minutes before serving.
