Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Wrap the bulb of garlic in aluminum foil and roast for 30-35 minutes.
  2. In a large pot, bring salted water to a boil. Add pasta and cook until al dente. Reserve 1 cup of pasta water, drain the rest.
  3. In a medium saucepan, heat olive oil over medium heat. Add mashed roasted garlic and sauté for about 2 minutes.
  4. Gradually stir in the heavy cream and heat through for 3-4 minutes without boiling.
  5. Mix in lemon juice, lemon zest, salt, and black pepper. Cook for an additional 2 minutes while stirring.
  6. Gradually add Parmesan cheese, stirring until melted and incorporated.
  7. Combine the drained pasta with the sauce, adding reserved pasta water for consistency if needed.
  8. Garnish with freshly chopped parsley before serving.
