- Preheat your oven to 400°F (200°C). Wrap the bulb of garlic in aluminum foil and roast for 30-35 minutes.
- In a large pot, bring salted water to a boil. Add pasta and cook until al dente. Reserve 1 cup of pasta water, drain the rest.
- In a medium saucepan, heat olive oil over medium heat. Add mashed roasted garlic and sauté for about 2 minutes.
- Gradually stir in the heavy cream and heat through for 3-4 minutes without boiling.
- Mix in lemon juice, lemon zest, salt, and black pepper. Cook for an additional 2 minutes while stirring.
- Gradually add Parmesan cheese, stirring until melted and incorporated.
- Combine the drained pasta with the sauce, adding reserved pasta water for consistency if needed.
- Garnish with freshly chopped parsley before serving.
