  • 4 cups Fresh Spinach Can substitute with kale
  • 1 cup Sun-Dried Tomatoes Consider roasted red peppers as an alternative
  • 1 cup Heavy Cream Use half-and-half for a lighter version
  • ½ cup Parmesan Cheese Pecorino Romano can be used for a sharper flavor
  • 3 cloves Garlic Use fresh for better flavor
  • 2 tbsp Olive Oil Butter can be used for extra richness

  • ¼ cup Additional Parmesan For serving

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil over high heat. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in fresh spinach and cook for 2-3 minutes until wilted.
  4. Add sun-dried tomatoes and heavy cream to the skillet. Allow to simmer for about 5 minutes until sauce thickens.
  5. Mix in grated Parmesan cheese until melted and season with salt and pepper.
  6. Add the drained spaghetti to the skillet and toss gently to coat the pasta in the sauce. Warm through.
  7. Plate the spaghetti and spinach mixture, garnishing with additional grated Parmesan if desired.
