Cooking Instructions
- Bring a large pot of salted water to a boil over high heat. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in fresh spinach and cook for 2-3 minutes until wilted.
- Add sun-dried tomatoes and heavy cream to the skillet. Allow to simmer for about 5 minutes until sauce thickens.
- Mix in grated Parmesan cheese until melted and season with salt and pepper.
- Add the drained spaghetti to the skillet and toss gently to coat the pasta in the sauce. Warm through.
- Plate the spaghetti and spinach mixture, garnishing with additional grated Parmesan if desired.
