  • 1 medium Onion chopped
  • 1 pint Cherry Tomatoes halved
  • 2 cloves Garlic minced
  • 2 tablespoons Tomato Paste or tomato puree
  • 1/2 cup Sun-Dried Tomatoes chopped
  • 4 cups Vegetable Broth low-sodium recommended
  • 1 can Cannellini Beans rinsed
  • 4 ounces Vegan Cream Cheese or cashew cream
  • 2 cups Mixed Greens e.g., spinach or kale
  • 1 tablespoon Lemon Juice or vinegar
  • 1/4 cup Fresh Basil for garnish

Step-by-Step Instructions
  1. Heat the Olive Oil in a large skillet over medium heat. Add the chopped Onion and sauté for about 5 minutes until soft and translucent.
  2. Stir in the halved Cherry Tomatoes and cook for another 3-4 minutes until they start to burst.
  3. Add the minced Garlic, Tomato Paste, and chopped Sun-Dried Tomatoes. Cook for 1 minute until fragrant.
  4. Pour in the Vegetable Broth and add the rinsed Cannellini Beans. Let simmer for about 5 minutes.
  5. Reduce heat to low and stir in the Vegan Cream Cheese, Mixed Greens, and Lemon Juice until the cream cheese melts.
  6. Season with salt and pepper, ladle into bowls, and garnish with Fresh Basil.
