- Cook the pasta in a large pot of salted water according to package instructions until al dente, about 10-12 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season the chicken with salt and pepper, add to skillet, cook for 6-8 minutes until golden brown, then remove and set aside.
- In the same skillet, reduce heat to medium, add minced garlic and sun-dried tomatoes, sauté for 2-3 minutes until fragrant.
- Lower the heat and stir in heavy cream, basil, and oregano. Simmer for 3-5 minutes until thickened slightly.
- Return chicken to skillet, stir in spinach and cooked pasta, and toss until spinach wilts, about 2-3 minutes. Stir in Parmesan cheese.
- Transfer to serving dish, garnish with basil and additional Parmesan, and serve immediately.
