Step-by-Step Instructions
  1. Prepare the shrimp by chopping it into a coarse paste using a food processor or knife. Transfer to a mixing bowl.
  2. Mix in the egg white, cornstarch, water chestnuts, spring onions, sesame oil, salt, white pepper, sugar, and optional Shaoxing wine. Stir for 2-3 minutes until well combined.
  3. Shape the mixture into patties about ½ inch thick and place on a plate.
  4. Heat oil in a non-stick skillet over medium heat until shimmering.
  5. Fry the patties for 2-3 minutes on each side until golden brown.
