For the Creamy Dressing
  • 1 cup Plain Greek Yogurt Can use low-fat or vegan yogurt
  • 1/4 cup Mayonnaise Vegan mayo can be used
  • 1/4 cup Fresh Orange Juice
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Honey Can substitute with maple syrup
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Step-by-Step Instructions
  1. Peel and grate the large carrots into a large mixing bowl.
  2. Core and dice the medium apples into small cubes, adding them to the bowl immediately.
  3. Finely shred the red cabbage and toss it into the mixing bowl along with the raisins or dried cranberries.
  4. In a separate bowl, whisk together the plain Greek yogurt, mayonnaise, fresh orange juice, lemon juice, honey, salt, and pepper until smooth and creamy.
  5. Pour the creamy dressing over the salad ingredients and gently toss until evenly coated.
  6. Taste the salad and adjust seasoning as desired.
  7. If time permits, refrigerate the salad for 15 minutes.
  8. Before serving, garnish with extra chopped nuts or parsley.
