  • 1 cup Pumpkin Puree canned or homemade
  • 1/2 cup Water
  • 1/3 cup Oil or Almond Butter substitute with extra pumpkin for low-fat
  • 1/2 cup Mini Chocolate Chips optional
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon optional
For Toppings
  • 1/4 cup Almond Butter
  • 1/4 cup Powdered Sugar
  • 1/2 cup Homemade Frosting for special occasions

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, sift together your dry ingredients: flour, cocoa powder, baking powder, baking soda, salt, and sugar. Whisk until well combined.
  3. In another bowl, mix the wet ingredients: pumpkin puree, water, and oil (or almond butter), along with vanilla extract. Stir until smooth.
  4. Carefully fold the wet mixture into the dry ingredients until just combined.
  5. Transfer the batter to your greased loaf pan and sprinkle mini chocolate chips on top if desired.
  6. Bake for 40 minutes. Check for doneness with a toothpick; it should come out mostly clean.
  7. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
