- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, sift together your dry ingredients: flour, cocoa powder, baking powder, baking soda, salt, and sugar. Whisk until well combined.
- In another bowl, mix the wet ingredients: pumpkin puree, water, and oil (or almond butter), along with vanilla extract. Stir until smooth.
- Carefully fold the wet mixture into the dry ingredients until just combined.
- Transfer the batter to your greased loaf pan and sprinkle mini chocolate chips on top if desired.
- Bake for 40 minutes. Check for doneness with a toothpick; it should come out mostly clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
