Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  3. In a separate bowl, whisk together eggs, milk, and vegetable oil until smooth.
  4. Gradually pour the wet ingredients into the bowl of dry ingredients, folding gently.
  5. Spoon the batter into cupcake liners, filling each about two-thirds full, and bake for 18-20 minutes.
  6. While the cupcakes cool, whip together mascarpone cheese and brewed espresso until light and fluffy.
  7. Once cooled, cut the tops off the cupcakes, scoop out a bit more to create space, and fill with mascarpone mixture.
  8. Dust the tops with cocoa powder before serving to enhance the flavor and appearance.
