Step-by-Step Instructions for Apple Cider Honey Muffins
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium saucepan, bring 1 ¼ cups of apple cider to a gentle boil, then simmer for 10–15 minutes until reduced to 1 cup. Cool completely.
  3. In a large mixing bowl, combine cooled apple cider, melted butter, eggs, honey, apple butter, dark brown sugar, and vanilla extract. Whisk until smooth.
  4. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, all-spice, cloves, and salt. Gradually fold into the wet mixture, taking care not to overmix.
  5. Stir in finely chopped apple and optional ingredients like pecans or chocolate chips until just combined.
  6. Fill the muffin cups about two-thirds full and bake for 25–30 minutes until golden brown and a toothpick comes out clean.
  7. Cool in the pan for about 5 minutes, then prepare a cinnamon-sugar topping by mixing ¼ cup sugar with 1 tsp cinnamon. Brush muffins with melted butter and dip tops in cinnamon-sugar.
