- Heat about two inches of vegetable oil in a deep skillet over medium-high heat until shimmering, about 350°F (180°C). Add wonton wrappers, frying for 30 to 45 seconds per side until golden brown. Transfer to a plate lined with paper towels to drain excess oil, and sprinkle with sea salt.
- In a medium-sized bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of sriracha, 1 tablespoon of toasted sesame oil, the juice of one fresh lime, 1 tablespoon of rice vinegar, and 1 teaspoon of honey until well combined.
- In another bowl, dice sushi-grade tuna into small cubes. Pour the spicy dressing over the tuna and toss gently. Fold in chopped scallions, cilantro, and toasted sesame seeds.
- Mix in diced avocado just before serving, folding gently to maintain avocado chunks.
- Serve the Spicy Tuna Tartare on a platter or in bowls with crispy wonton chips and garnish with lime wedges.
