Ingredients
  

For the Tartare
  • 8 oz Sushi-grade tuna firm, deep red tuna; Ahi or yellowfin preferred
  • 2 tbsp Soy sauce provides umami
  • 1 tbsp Sriracha sauce adjust according to spice preference
  • 1 tbsp Toasted sesame oil adds richness
  • 1 Fresh lime juice freshly squeezed
  • 1 tbsp Rice vinegar can substitute apple cider vinegar
  • 1 tsp Honey or agave syrup for sweetness
  • 2 tbsp Chopped scallions or green onions
  • 2 tbsp Chopped cilantro optional
  • 1 tbsp Toasted sesame seeds for garnish
  • 1 Avocado ripe but firm, diced
For the Wonton Chips
  • 10 Wonton wrappers base for chips
  • 2 cups Vegetable oil for frying
  • 1 tsp Sea salt for seasoning

Method
 

Instructions
  1. Heat about two inches of vegetable oil in a deep skillet over medium-high heat until shimmering, about 350°F (180°C). Add wonton wrappers, frying for 30 to 45 seconds per side until golden brown. Transfer to a plate lined with paper towels to drain excess oil, and sprinkle with sea salt.
  2. In a medium-sized bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of sriracha, 1 tablespoon of toasted sesame oil, the juice of one fresh lime, 1 tablespoon of rice vinegar, and 1 teaspoon of honey until well combined.
  3. In another bowl, dice sushi-grade tuna into small cubes. Pour the spicy dressing over the tuna and toss gently. Fold in chopped scallions, cilantro, and toasted sesame seeds.
  4. Mix in diced avocado just before serving, folding gently to maintain avocado chunks.
  5. Serve the Spicy Tuna Tartare on a platter or in bowls with crispy wonton chips and garnish with lime wedges.
