  • 1 tsp Baking Soda

  • 1/2 cup Unsalted Butter softened
  • 1 cup Granulated Sugar or brown sugar for deeper flavor
  • 3 large Eggs room temperature
  • 1 tsp Vanilla Extract or almond extract
  • 1 cup Sour Cream or Greek yogurt
  • 1 cup Fresh Strawberries chopped
  • 2 tbsp Flour for tossing strawberries
For the Glaze
  • 1 cup Powdered Sugar or coconut sugar
  • 1/4 cup Strawberry Puree adjust quantity for consistency
  • 1/2 tsp Optional Vanilla Extract for glaze

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease/flour a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  5. Gradually add the dry ingredients alternately with the sour cream, mixing until just combined.
  6. Toss the chopped strawberries with 2 tablespoons of flour to prevent sinking.
  7. Fold the floured strawberries into the batter gently.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55 to 70 minutes, until a skewer comes out clean.
  10. Cool in the pan for 10-15 minutes, then transfer to a wire rack.
  11. To create the glaze, blend reserved strawberries into a puree and mix with powdered sugar.
  12. Drizzle the glaze over the cooled cake.
