Step-by-Step Instructions for Vegan Peanut Butter Gelato
  1. In a small saucepan, combine canned coconut milk, sugar, and corn starch. Whisk over medium heat until smooth.
  2. Continue whisking until thickened to gravy-like consistency, about 5-7 minutes. Simmer for an additional 3-4 minutes.
  3. Remove from heat and whisk in smooth peanut butter until fully melted and integrated.
  4. Pour the mixture into a Ninja Creami pint container and freeze for at least 24 hours.
  5. After freezing, insert the container into the Ninja Creami and select the “Gelato” function to creamify.
  6. Create a hole in the center and add mix-ins like chopped peanut butter cups or peanuts, then use the “Mix-In” button.
  7. Serve immediately in chilled bowls or refreeze for later, using the “Re-Spin” feature if needed.
