Step-by-Step Instructions
  1. Combine fresh pineapple rings with dark and coconut rum. Let them soak for at least 1 hour, then drain and pat dry.
  2. Set up three shallow bowls: one with flour, one with whisked eggs and coconut milk, and one with coconut flakes.
  3. Dip each drained pineapple ring in flour, then in egg mixture, and finally press into coconut flakes.
  4. Heat vegetable oil to 350°F (175°C) in a deep skillet, ensuring it shimmers before frying.
  5. Fry the coated pineapple rings in batches for about 1 minute on each side until golden brown and crispy.
  6. Blend softened cream cheese with powdered sugar and a few tablespoons of the reserved rum until smooth.
  7. Plate the fried pineapple and serve warm with the creamy dipping sauce on the side.
