For the Greek Salsa
  • 2 cups Tomatoes ripe, in-season
  • 1 cup Cucumber or diced bell peppers
  • 1/2 cup Red Onion or shallots
  • 1/2 cup Olives preferably Kalamata
For the Tzatziki
  • 1 cup Greek Yogurt or coconut yogurt for dairy-free
  • 1/2 cup Cucumber grated
  • 1 clove Garlic minced
  • 2 tablespoons Fresh Herbs dill or mint

Step-by-Step Instructions
  1. Prepare Greek Salsa: In a medium bowl, combine diced tomatoes, cucumber, red onion, and olives. Toss gently to mix. Cover and refrigerate for at least 10 minutes.
  2. Make Tzatziki: In another bowl, combine Greek yogurt, grated cucumber, minced garlic, and chopped fresh herbs. Stir until well mixed, then season with salt and pepper. Cover and chill for about 10 minutes.
  3. Cook Chicken: Heat a large non-stick skillet over medium heat and add olive oil. Add ground chicken, seasoning it with garlic powder, onion powder, oregano, dill, parsley, salt, and lemon juice. Cook for 7-10 minutes until fully cooked.
  4. Assemble Bowls: Use a base of rice or cauliflower rice, top with cooked chicken, Greek salsa, and a dollop of tzatziki. Serve immediately.
