Method
 

Steps
  1. Preheat your oven to 425°F (220°C) and prepare a quarter-sheet pan with parchment paper and light greasing.
  2. In a mixing bowl, whisk together 3 large eggs, 1 cup of plain cottage cheese, 1 teaspoon of vanilla essence, 2 tablespoons of lemon juice, and 2 tablespoons of sugar or honey until smooth.
  3. In another bowl, combine 1/2 cup of flour, 1 teaspoon of baking powder, and 1/4 teaspoon of kosher salt. Whisk until evenly blended.
  4. Gradually fold the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared sheet pan and spread evenly. Top with 1/2 cup of sliced fresh strawberries.
  6. Bake in the preheated oven for about 15 minutes until golden and puffed. Test for doneness.
