  • 2 cups Frozen Edamame Shelled
  • 1 cup Fresh Corn Can use frozen
  • 1 medium Red Bell Pepper Diced
  • 1/2 medium Red Onion Diced
  • 2 stalks Green Onion Sliced
For the Dressing
  • 1/4 cup Cilantro Chopped
  • 3 tablespoons Lime Juice Freshly squeezed
  • 1/4 cup Avocado Oil Or olive oil
  • 2 tablespoons Red Apple Vinegar Or any mild vinegar
  • 1 tablespoon Honey Or agave syrup
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cumin

Method
 

Cooking Steps
  1. Cook the edamame in boiling water for 4-5 minutes until tender. Drain and cool.
  2. Prepare corn by sautéing in oil for 3-4 minutes or cut off the cob and cook for 2-3 minutes.
  3. Chop the red bell pepper, red onion, and green onion, and mix them in a large bowl.
  4. Make the dressing by mixing lime juice, avocado oil, vinegar, cilantro, honey, salt, pepper, and cumin in a mason jar.
  5. Combine the dressing with the veggies, edamame, and corn, tossing to coat evenly.
  6. Chill in the fridge for at least 30 minutes for optimal flavor.
