Cooking Steps
- Cook the edamame in boiling water for 4-5 minutes until tender. Drain and cool.
- Prepare corn by sautéing in oil for 3-4 minutes or cut off the cob and cook for 2-3 minutes.
- Chop the red bell pepper, red onion, and green onion, and mix them in a large bowl.
- Make the dressing by mixing lime juice, avocado oil, vinegar, cilantro, honey, salt, pepper, and cumin in a mason jar.
- Combine the dressing with the veggies, edamame, and corn, tossing to coat evenly.
