Preparation Steps
- Slice the firm green tomatoes into thick rounds, about 1/4 inch thick.
- In a shallow bowl, pour in the milk and set aside. Combine flour, breadcrumbs, and cornmeal in another bowl.
- Heat about 1/2 inch of olive oil in a skillet over medium-high heat until it's around 350°F (175°C).
- Carefully fry the coated tomato slices for 3-4 minutes on each side until golden brown.
- Prepare the vinaigrette by blending roasted red peppers, olive oil, and seasoning until smooth.
- On a platter, stack the fried tomatoes and top each with crumbled goat cheese and vinaigrette.
- Garnish with fresh basil leaves and serve warm.
