  1. In a large mixing bowl, combine the plain Greek yogurt, peanut butter, maple syrup, and vanilla extract. Whisk until smooth and creamy.
  2. Line a baking sheet with parchment paper. Scoop out the yogurt mixture and drop rounded mounds onto the prepared sheet.
  3. Place the baking sheet in the freezer for about 4 hours or until the yogurt bites are completely solid.
  4. In a microwave-safe bowl, combine chocolate chips and avocado oil. Heat in 30-second intervals, stirring until smooth.
  5. Dip each frozen yogurt bite into the melted chocolate and place back on the parchment-lined sheet. Sprinkle sea salt on top if desired.
