  • 1 piece fresh ginger or ground ginger in a pinch
  • 4 cloves garlic or garlic powder at a 1:3 ratio
  • 1 medium onion can substitute with shallots or leeks
For the Vegetables
  • 1 cup carrots can substitute with parsnips
  • 1 piece bell pepper any color is fine, can substitute with zucchini
  • 2 cups bok choy or spinach can use kale or Swiss chard
For the Noodles
  • 4 cups egg noodles or rice noodles whole grain noodles for healthier option
For the Garnish
  • 2 stalks green onions can substitute with chives
  • salt to taste
  • pepper to taste

Instructions
  1. Heat the oil in a large pot over medium heat.
  2. Add the sliced chicken, season with salt and pepper, and cook until golden brown, about 5–7 minutes.
  3. Stir in diced onion, minced garlic, and grated ginger and sauté for an additional 2–3 minutes.
  4. Pour in the chicken broth and water, stir well, and bring to a rolling boil.
  5. Add the carrots and bell pepper, reduce heat, and simmer for about 5 minutes.
  6. Introduce the noodles and cook according to package instructions, typically 5–7 minutes.
  7. In the final 2 minutes, stir in bok choy or spinach.
  8. Taste and adjust seasoning with salt and pepper before serving.
  9. Ladle into bowls and garnish with sliced green onions.
