  2. In a small bowl, combine 2 tablespoons of extra virgin olive oil, 1 tablespoon of lemon juice, and the zest of half a lemon. Season with salt and pepper, then whisk until emulsified.
  3. Transfer the sliced vegetables into a large mixing bowl. Drizzle the dressing over the top and toss gently.
  4. Incorporate about 1 tablespoon of chopped fresh parsley or dill, and optionally add shaved Parmesan or crumbled feta.
