Ingredients
  

For the Meatballs
  • 1 lb Ground Beef 80/20 fat ratio for juicy results
  • 1 Onion Finely grated or minced
  • 2 cloves Garlic Minced
  • 1 Egg Acts as a binder
  • 1 cup Breadcrumbs Soft or panko
  • 1/2 cup Milk Helps soften breadcrumbs
  • 1/4 cup Parsley Chopped
For the Sauce
  • 2 tbsp Olive Oil For searing
  • 2 tbsp Flour For dusting
  • 1 cup Chicken Broth For simmering
  • 1/4 cup Lemon Juice Freshly squeezed
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. In a small bowl, combine the soft breadcrumbs with milk, allowing them to soak for about 5 minutes.
  2. In a large mixing bowl, combine ground beef, soaked breadcrumbs, grated onion, minced garlic, egg, chopped parsley, salt, and pepper. Mix until just combined.
  3. Scoop the mixture into 1.5-inch portions and roll into balls. Dust each meatball with flour.
Cooking
  1. Heat olive oil in a skillet. Sear the meatballs for 3-4 minutes per side until golden brown.
  2. In the same skillet, remove excess grease, add minced garlic, and sauté for 30 seconds. Add chicken broth and lemon juice, and bring to a simmer.
  3. Add the seared meatballs back into the skillet. Cover and simmer for 15-20 minutes.
  4. Once cooked, garnish with parsley and lemon slices. Serve hot with rice or bread.

Notes
