- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Sauté chopped onion and minced garlic for about 2 minutes until translucent.
- Add the ground turkey to the skillet, sauté for 5 to 6 minutes until browned.
- Pour in drained diced tomatoes, Italian herbs, salt, and black pepper into the turkey mixture. Simmer for 3 to 4 minutes.
- Layer half of the sliced zucchini in the greased baking dish, followed by half of the turkey mixture and half of the mozzarella cheese. Repeat layers.
- Bake for 30 to 35 minutes until cheese is melted and golden brown.
- Let cool for 5 minutes before serving.
