  • 2 pounds Chicken Thighs or Breasts
For the Sauce
  • 1 cup Pineapple Juice Fresh juice is recommended.
  • 1/4 cup Low-Sodium Soy Sauce
  • 1/4 cup Brown Sugar Adjust to taste.
  • 1/4 cup Ketchup
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ground Dried Ginger
  • 1 tablespoon Rice Wine Vinegar Optional.
  • 1/2 teaspoon Black Pepper
For the Vegetables
  • 1 large Red Bell Pepper Chopped.
  • 1 large Onion Chopped.
  • 1 cup Pineapple Chunks Added at the end.
For Thickening
  • 2 tablespoons Cornstarch
  • 1/4 cup Cold Water
For Serving
  • 4 cups Cooked White or Brown Rice Essential for serving.
  • 2 tablespoons Butter Optional.

Step-by-Step Instructions
  1. Prep the Slow Cooker: Spray the inside of the slow cooker with cooking spray or oil.
  2. Add Chicken and Vegetables: Place chicken at the bottom, layer on chopped pepper and onion.
  3. Make the Sauce: Whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic powder, ginger, rice wine vinegar, and black pepper, then pour over chicken and vegetables.
  4. Cook: Cover and cook on LOW for 4-6 hours or HIGH for 2.5-4 hours until chicken is tender.
  5. Thicken the Sauce: Mix cornstarch with cold water, add to slow cooker 30 minutes before serving.
  6. Serve: Spoon over cooked rice and enjoy!
