- Prep the Slow Cooker: Spray the inside of the slow cooker with cooking spray or oil.
- Add Chicken and Vegetables: Place chicken at the bottom, layer on chopped pepper and onion.
- Make the Sauce: Whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic powder, ginger, rice wine vinegar, and black pepper, then pour over chicken and vegetables.
- Cook: Cover and cook on LOW for 4-6 hours or HIGH for 2.5-4 hours until chicken is tender.
- Thicken the Sauce: Mix cornstarch with cold water, add to slow cooker 30 minutes before serving.
- Serve: Spoon over cooked rice and enjoy!
