  • 1 can Garbanzo Beans drained and rinsed
  • 1 can White Beans drained and rinsed
  • 1 cup Diced Turkey Breast or cooked chicken
  • ½ cup Diced Salami or Cured Sausage or omit for a lighter dish
  • 1 large Green Bell Pepper diced
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Sliced Pepperoncini
  • ¼ cup Red Onion finely chopped
  • ¼ cup Parsley chopped
  • 1 cup Diced Provolone or Mozzarella or vegan cheese
For the Creamy Grinder Dressing
  • ½ cup Plain Greek Yogurt or dairy-free yogurt
  • ¼ cup Extra Virgin Olive Oil or avocado oil
  • 2 tablespoons Red Wine Vinegar or apple cider vinegar
  • 2 tablespoons Pepperoncini Brine or pickle juice
  • 1 tablespoon Dijon Mustard or regular mustard
  • 1 clove Garlic minced
  • 1 teaspoon Dried Oregano or Italian seasoning
  • a pinch Red Pepper Flakes to taste
  • Sea Salt to taste

Method
 

Preparation
