Step-by-Step Instructions
  1. Season the beef cubes with adobo seasoning and black pepper, ensuring each piece is well-coated.
  2. In a Dutch oven, heat olive oil over medium heat and brown the seasoned beef in batches for 3-5 minutes, then set aside.
  3. In the same pot, add sliced onion and sofrito, cook until the onion is translucent, about 4-5 minutes.
  4. Stir in sazon seasoning, beef bouillon, dry red wine, tomato sauce, and bay leaves; bring to a rapid boil.
  5. Return the browned beef to the pot, reduce heat, cover, and simmer for 1.5 to 2 hours.
  6. Add diced potatoes, carrots, and optional olives; cover and simmer for an additional 30 minutes.
  7. Stir in red wine vinegar, adjust seasonings, and serve hot over white rice.
