  • 2 medium Zucchini sliced thinly
  • 2 large Bell Peppers mixed colors
  • 2 cups Fresh Spinach
For the Cheese Mixture
  • 15 oz Ricotta Cheese can substitute with cottage cheese
  • 1 large Egg
  • 1 tsp Garlic Powder or fresh garlic
  • 1 tsp Italian Seasoning
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 cup Parmesan Cheese sprinkled into mixture
For the Topping
  • 2 cups Mozzarella Cheese fresh or shredded

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and set a timer for 10 minutes.
  2. In a large skillet, heat olive oil over medium heat, add diced bell peppers and spinach, sauté for about 5 minutes.
  3. In a mixing bowl, combine ricotta cheese, a beaten egg, garlic powder, Italian seasoning, salt, pepper, and parmesan cheese until smooth.
  4. In a baking dish, layer ricotta mixture, zucchini or pasta, sautéed veggies until all ingredients are used.
  5. Top with mozzarella and sprinkle extra parmesan.
  6. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes until golden.
  7. Let the lasagna rest for 10 minutes before slicing.
  8. Garnish with fresh herbs and serve with a side salad or garlic bread.
