  • 1/2 cup Unsalted Butter Melted.
Cheesecake Filling
  • 24 oz Cream Cheese Full-fat for best texture.
  • 1 cup Granulated Sugar Adjust for sweetness.
  • 1 cup Sour Cream Greek yogurt can be substituted.
  • 1 cup Heavy Cream Can use non-dairy alternatives.
  • 3/4 cup Cocoa Powder Unsweetened.
  • 4 Eggs Room temperature.
Marshmallow Topping
  • 1 cup Marshmallow Fluff For fluffy topping.
  • 1 cup Heavy Cream Whipped.

Method
 

Making the Cheesecake
  1. Preheat your oven to 325°F (163°C). Prepare your springform pan with aluminum foil.
  2. Combine crushed chocolate cookies with melted unsalted butter. Press into the bottom of the springform pan.
  3. Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then mix in sour cream and cocoa powder.
  4. Prepare a water bath by placing a larger baking pan filled with hot water in the oven while baking.
  5. Bake the cheesecake for 50-60 minutes until edges are set and center jiggles slightly. Cool in the oven with the door ajar.
  6. Transfer to the refrigerator and chill for at least 4 hours or overnight.
  7. Whip heavy cream with marshmallow fluff until soft peaks form. Spread over the cheesecake.
  8. Remove from the springform pan, slice, and serve with optional garnishes.
