Method
 

Step-by-Step Instructions for Cherry Tiramisu
  1. In a medium saucepan, combine cherries with water, boil and simmer for 15 minutes, mash cherries, strain, and cool.
  2. Whip the heavy cream until stiff peaks form, about 3-5 minutes, and set aside.
  3. Combine mascarpone cheese, sugar, and vanilla extract, whisk until smooth, about 2-3 minutes.
  4. Fold whipped cream into mascarpone mixture in three additions until smooth.
  5. Gradually mix cooled cherry juice into the mascarpone and whipped cream mixture until evenly colored.
  6. Mix brewed coffee with cherry amaretto in a shallow dish and cool slightly.
  7. Dip ladyfingers quickly into coffee-amaretto mixture, layer in dish, and spread half of the cherry mascarpone filling over.
  8. Repeat layers with dipped ladyfingers and remaining mascarpone filling; smooth the top.
  9. Cover with plastic wrap and refrigerate for at least 6 hours or overnight.
  10. Prepare cherry topping by cooking fresh cherries, sugar, and water until softened; blend and cool.
  11. Garnish with fresh cherries and optional chocolate flakes before serving.
