- In a medium saucepan, combine cherries with water, boil and simmer for 15 minutes, mash cherries, strain, and cool.
- Whip the heavy cream until stiff peaks form, about 3-5 minutes, and set aside.
- Combine mascarpone cheese, sugar, and vanilla extract, whisk until smooth, about 2-3 minutes.
- Fold whipped cream into mascarpone mixture in three additions until smooth.
- Gradually mix cooled cherry juice into the mascarpone and whipped cream mixture until evenly colored.
- Mix brewed coffee with cherry amaretto in a shallow dish and cool slightly.
- Dip ladyfingers quickly into coffee-amaretto mixture, layer in dish, and spread half of the cherry mascarpone filling over.
- Repeat layers with dipped ladyfingers and remaining mascarpone filling; smooth the top.
- Cover with plastic wrap and refrigerate for at least 6 hours or overnight.
