  • 1 tablespoon Fresh ginger Grated
For Cooking
  • 2 tablespoons Olive oil Or light oil if preferred
  • 2 tablespoons Lime juice Fresh recommended
  • 1 teaspoon Chili flakes Optional
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1/4 cup Fresh cilantro For garnish

Method
 

Marinating and Cooking Instructions
  1. In a bowl, blend together brown sugar, soy sauce, minced garlic, grated ginger, lime juice, and olive oil to form a marinade. Marinate the chicken in a resealable bag or dish for at least 30 minutes.
  2. Preheat your grill to medium-high heat (375°F). If baking, preheat the oven to 375°F. If slow cooking, set it on low.
  3. Grill the chicken for 6-8 minutes per side or bake covered for 15 minutes, then uncovered for another 10-15 minutes until fully cooked.
  4. Taste the leftover marinade and adjust with more lime juice or soy sauce if needed. This can be used as a sauce by simmering it.
  5. Once cooked, transfer the chicken to a platter, drizzle with reduced marinade, and garnish with cilantro. Serve with rice or quinoa.
