- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Squeeze out excess moisture from the thawed spinach using a kitchen towel.
- Combine spinach, crumbled feta, ricotta, garlic, herbs, and beaten egg in a bowl. Season with salt and pepper.
- Roll out puff pastry sheets to about 1/8 inch thick and spread the filling on it evenly.
- Roll the pastry into a tight log and slice into 1-inch thick rounds.
- Place the rolls cut-side up on the baking sheet and brush with egg wash. Sprinkle sesame or poppy seeds on top if desired.
- Bake for 18-22 minutes until golden brown and puffed up.
- Allow to cool slightly on the baking sheet before transferring to a wire rack.
