For the Rolls
  • 1 package Puff Pastry Sheets Thaw if frozen
  • 10 ounces Frozen Chopped Spinach Thaw and drain well
  • 6 ounces Feta Cheese Can substitute with goat cheese or mozzarella
  • 1/2 cup Ricotta or Cream Cheese Optional
  • 1 large Egg For binding and egg wash
  • 2 cloves Garlic (minced)
  • 1 small Onion (finely chopped) Optional
  • 1/4 cup Fresh Dill or Parsley (chopped) Can replace with other herbs
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
For Garnish
  • 1 large Egg Wash 1 egg beaten with water or milk
  • 2 tablespoons Sesame or Poppy Seeds Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Squeeze out excess moisture from the thawed spinach using a kitchen towel.
  3. Combine spinach, crumbled feta, ricotta, garlic, herbs, and beaten egg in a bowl. Season with salt and pepper.
  4. Roll out puff pastry sheets to about 1/8 inch thick and spread the filling on it evenly.
  5. Roll the pastry into a tight log and slice into 1-inch thick rounds.
  6. Place the rolls cut-side up on the baking sheet and brush with egg wash. Sprinkle sesame or poppy seeds on top if desired.
  7. Bake for 18-22 minutes until golden brown and puffed up.
  8. Allow to cool slightly on the baking sheet before transferring to a wire rack.

Notes

Drain spinach well to avoid sogginess. These rolls can be assembled in advance and stored in the fridge for easy prep.
