Step‑by‑Step Instructions
  1. Start by thoroughly rinsing 2 whole oranges under cool water, then place them in a pot and cover with water. Simmer on low heat for about 1 hour, until the oranges are tender and soft.
  2. Once the oranges are soft, carefully drain them and allow them to cool slightly. Transfer the cooked oranges to a blender and blend until smooth.
  3. While you prepare the batter, preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  4. In a large mixing bowl, combine orange puree, 4 large eggs, and 1/2 cup honey. Stir well before adding 1 cup ground pistachios, 1 cup almond flour, 1 teaspoon vanilla extract, and 1 teaspoon baking soda. Mix until smooth.
  5. Pour the batter into the greased springform pan and bake for about 1 hour, or until a toothpick comes out clean.
  6. While the cake bakes, make the glaze by simmering 1/2 cup of fresh orange juice and 2 tablespoons of honey until the mixture reduces by half.
  7. Once the cake has finished baking, let it cool for about 10 minutes, then brush the warm glaze generously over the top.
