- Start by thoroughly rinsing 2 whole oranges under cool water, then place them in a pot and cover with water. Simmer on low heat for about 1 hour, until the oranges are tender and soft.
- Once the oranges are soft, carefully drain them and allow them to cool slightly. Transfer the cooked oranges to a blender and blend until smooth.
- While you prepare the batter, preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a large mixing bowl, combine orange puree, 4 large eggs, and 1/2 cup honey. Stir well before adding 1 cup ground pistachios, 1 cup almond flour, 1 teaspoon vanilla extract, and 1 teaspoon baking soda. Mix until smooth.
