Dough Preparation
- Warm 3/4 cup of milk and sprinkle instant yeast over it. Let sit for 5 minutes until frothy.
- Mix in eggs, melted butter, salt, cinnamon, and sugar. Add shredded carrots and coconut.
- Gradually mix in flour until combined, creating a wet dough.
- Knead with a dough hook for 5–7 minutes until smooth.
- Let rise in a greased bowl until doubled, about 30 minutes.
Filling and Baking
- Make the filling with melted butter, brown sugar, and cinnamon until a paste forms.
- Roll out dough into a rectangle, spread with filling, and roll tightly.
- Cut into slices and let rise for 20 minutes.
- Pour warm heavy cream over rolls, bake at 350°F for 27–30 minutes.
- Prepare frosting and spread over warm rolls.
