Ingredients

For the Batter
  • 2 cups Sweet Corn Use thawed frozen corn if fresh is unavailable.
  • 1 large Egg No substitution recommended.
  • 1 cup All-Purpose Flour Use a gluten-free flour blend for gluten-free option.
  • 1 teaspoon Salt Essential for a well-balanced dish.
  • 2 tablespoons Granulated Sugar Consider honey for a fragrant twist.
  • 1 tablespoon Vegetable Oil Swap with butter for extra flavor.
For the Filling
  • 4 slices Buffalo Mozzarella Cheese Queso de mano or queso fresco are good alternatives.
For Serving
  • 2 tablespoons Unsalted Butter A must for serving.

Equipment

  • blender
  • non-stick skillet

Method

Step-by-Step Instructions
  1. In a blender or food processor, combine the sweet corn, egg, flour, salt, and sugar. Blend until mostly smooth with some corn texture, about 30 seconds.
  2. Place a non-stick skillet over medium heat and warm for about 2 minutes. Add a tablespoon of vegetable oil, ensuring it coats the surface.
  3. Pour approximately 60 ml of the batter into the skillet, flatten slightly, and cook for 3-4 minutes until edges are golden. Flip and cook for another 3-4 minutes.
  4. Place a slice of buffalo mozzarella cheese in the center of the cachapa while it cooks to allow the cheese to melt.
  5. Fold the cachapa in half to encase the melted cheese, and serve immediately with unsalted butter on top.
