Ingredients

For the Beef and Sauce
  • 1 pound Ground Beef Substitute with ground turkey or chicken for a leaner option.
  • 1/4 cup Soy Sauce Low-sodium soy sauce can be substituted for a healthier option.
  • 2 tablespoons Brown Sugar Can replace with honey or a sugar alternative for a lighter option.
  • 1 tablespoon Sesame Oil Can substitute with any neutral oil if unavailable.
  • 1 tablespoon Sriracha Adjust to taste for desired heat level; optional based on spice preference.
  • 3 cloves Garlic Fresh garlic is best, but garlic powder can be used in a pinch.
For the Noodles and Garnish
  • 2 medium Zucchini Use medium-sized zucchini (6-8 inches) for the best texture.
  • 3 stalks Green Onions Can substitute with chives if needed.

Equipment

  • large skillet
  • medium bowl
  • whisk

Method

Step‑by‑Step Instructions
  1. In a medium bowl, whisk together brown sugar, soy sauce, sesame oil, minced garlic, and Sriracha until well combined. Set this delicious sauce aside.
  2. Heat a large skillet over medium-high heat and pour in a splash of olive oil. Once shimmering, add minced garlic and sauté until fragrant, about 1 minute.
  3. Add ground beef to the skillet, breaking it apart. Cook for 3 to 5 minutes until browned. Drain excess fat.
  4. Stir zucchini noodles and green onions into the beef mixture. Pour the reserved sauce over the top and mix well. Cook for about 2 minutes until zucchini noodles are just tender.
  5. Remove the skillet from heat. Plate the dish and garnish with additional green onions if desired.

Notes

Avoid cooking zucchini noodles for more than 2-3 minutes to keep them from becoming watery. Fresh garlic elevates the flavor significantly.
