Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis into thin rounds and sprinkle lightly with salt. Let sit for 10 minutes.
  3. Mix ricotta cheese, dried basil, oregano, garlic powder, salt, and pepper in a bowl until combined.
  4. Heat olive oil in a skillet over medium heat. Sauté zucchini for 3-4 minutes until slightly softened.
  5. In a baking dish, layer marinara sauce, zucchini, ricotta mixture, and mozzarella. Repeat layers, finishing with marinara and mozzarella.
  6. Cover with aluminum foil and bake for 20 minutes. Uncover and bake 5-10 minutes until cheese is golden and bubbly.
  7. Let cool for a few minutes before serving. Garnish with fresh basil if desired.
