Preparation
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- Combine the graham cracker crumbs, flour, sugar, and salt in a mixing bowl. Add melted butter and mix until resembling wet sand.
- Press about two-thirds of the mixture into the bottom of the prepared baking dish.
- Beat the cream cheese until smooth. Gradually add sugar, then eggs one at a time, mixing well. Stir in the lemon zest, lemon juice, and vanilla until smooth.
- Pour the cheesecake filling over the pressed crust and spread evenly.
- Sprinkle the remaining crumb mixture over the cheesecake filling.
- Bake in the preheated oven for 30 to 35 minutes until set and lightly golden on top. Cool at room temperature for about an hour.
- Chill in the refrigerator for at least 3 hours or overnight for best results.
