- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper. Arrange fish fillets with space between each.
- Scatter cherry tomatoes and Kalamata olives around the fish.
- Drizzle olive oil over the fish and vegetables. Sprinkle minced garlic and fresh herbs on top.
- Squeeze lemon juice over the fish and season with salt and pepper.
- Bake for about 15 to 20 minutes until the fish flakes easily with a fork.
- Remove from oven and garnish with additional fresh herbs if desired.
