Ingredients
  

Steak Marinade
  • 1 pound Flank or Skirt Steak Sirloin can be used as a substitute.
  • ½ cup Fresh Lime Juice Reduce if marinating for over 2 hours.
  • ¼ cup Olive Oil
  • 4 cloves Garlic, minced
  • ½ cup Fresh Cilantro, chopped
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder Adjust to your heat preference.
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Smoked Paprika
Bowl Assembly
  • 3 cups Cooked White Rice Try cauliflower rice for a keto option.
  • 1 can Black Beans, drained and rinsed
  • 1 cup Corn Charred for added sweetness.
  • 1 large Avocado, sliced
  • ½ medium Red Onion, thinly sliced
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Shredded Cheese Optional.
  • ½ cup Pico de Gallo or Salsa
  • ½ cup Sour Cream or Greek Yogurt Greek yogurt gives a tangy twist.

Method
 

Marinating and Cooking
  1. In a bowl, whisk together lime juice, olive oil, garlic, cilantro, cumin, chili powder, salt, black pepper, and smoked paprika. Place the steak in a zip-top bag, pour the marinade over it, and seal. Marinate for 30 minutes to 4 hours, no more than 24 hours to avoid mushiness.
  2. Cook 3 cups of fluffy white rice according to package instructions. Stir in lime juice, cilantro, and a pinch of salt while the rice is hot.
  3. Warm black beans over low heat, seasoning with salt and cumin. In a separate skillet, char 1 cup of corn over medium-high heat for about 5 minutes.
  4. Pat the marinated steak dry and sear in a hot skillet for 3-4 minutes per side until medium-rare. Let the steak rest for 10 minutes.
  5. Assemble the bowls: Add rice, black beans, corn, steak, and toppings like avocado, onion, tomatoes, cheese, pico de gallo, and sour cream.
