  • 2 teaspoons Pumpkin Pie Spice Can substitute with a mix of cinnamon and nutmeg.
  • 1 teaspoon Ground Cinnamon Extra pie spice can be a good alternative.
  • 1 teaspoon Vanilla Extract Swap for almond extract for a twist.
Optional Topping
  • 1 cup Whipped Cream Optional, can skip if avoiding dairy.

Method
 

Baking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. In a medium mixing bowl, whisk together the eggs, pumpkin puree, almond milk, Swerve brown sugar sweetener, pumpkin pie spice, ground cinnamon, and vanilla extract until smooth.
  3. Lightly spray six ramekins with nonstick cooking spray.
  4. Fill the ramekins with the batter about three-quarters full and bake at 425°F for 15 minutes until puffed and lightly golden.
  5. Reduce the oven temperature to 350°F (175°C) and bake for an additional 25-30 minutes until edges are set but the center is slightly jiggly.
  6. Let the ramekins cool on a wire rack for at least 1 hour before serving.
