Ingredients
  

For the Chicken Marinade
  • 1.5 pounds boneless, skinless chicken thighs Juicy and tender

For the Rice
  • 1.5 cups basmati rice Can substitute with jasmine rice
  • 1 large onion Finely chopped

Method
 

Marinating and Cooking
  1. In a mixing bowl, whisk together yogurt, olive oil, minced garlic, cumin, paprika, turmeric, salt, pepper, and lemon juice to create a flavorful marinade. Add the chicken thighs and marinate for at least 30 minutes.
  2. Heat a large pot over medium-high heat and add olive oil. Once hot, sear the marinated chicken thighs for 2-3 minutes on each side until golden brown. Remove and set aside.
  3. In the same pot, add more oil if needed and sauté chopped onions until translucent, about 5 minutes. Add minced garlic and sauté for another minute.
  4. Rinse basmati rice until water runs clear, then add to pot with onions. Lightly toast rice and mix with turmeric and a pinch of salt for 1-2 minutes.
  5. Pour in broth or water, stir, and bring to a gentle boil. Nestle seared chicken back in, reduce heat, cover, and simmer for 18-20 minutes.
  6. Once cooked, turn off heat and let sit covered for 5-10 minutes. Fluff rice with a fork and serve warm.
