Step-By-Step Instructions
  1. Slice the chicken thighs into bite-sized pieces and combine with marinade ingredients. Let marinate for 15 minutes.
  2. Heat olive oil in a large frying pan. Add marinated chicken and cook for 6-7 minutes, browning on all sides. Add onions and garlic halfway through.
  3. Stir in the long grain rice and sauté for 1 minute. Add hot chicken stock and bring to a simmer. Let bubble for 5 minutes without stirring.
  4. Reduce heat and cover, allowing to steam for 12 minutes until rice is fluffy and liquid is absorbed.
  5. Check rice for doneness, adjust seasoning if needed, and stir in parsley and dill before serving.
  6. Fluff rice with a fork and serve hot with favorite sides.
