- Preheat your oven to 425°F (220°C).
- Rinse the whole chicken under cold running water and pat it dry thoroughly with paper towels.
- Drizzle the chicken with extra virgin olive oil, then season generously with sea salt and freshly ground black pepper.
- Stuff the chicken cavity with quartered lemon and minced garlic.
- Place the seasoned chicken breast-side up in a roasting pan and roast for approximately 1 hour and 15 minutes.
