Ingredients
  

For the Salad
  • 1 can chickpeas rinsed and drained
  • 1 English cucumber diced
  • 1 cup cherry tomatoes halved
  • ½ red onion thinly sliced
  • ¼ cup fresh parsley chopped
For the Vinaigrette
  • ¼ cup extra virgin olive oil or avocado oil
  • 1 fresh lemon juice from 1 lemon
  • 2 tablespoons fresh dill or basil/mint
  • 1 clove garlic minced

Method
 

Step 1: Prepare the Vinaigrette
  1. In a small bowl, whisk together ¼ cup of extra virgin olive oil, the juice of one freshly squeezed lemon, 2 tablespoons of fresh dill, 1 minced garlic clove, and salt and pepper to taste. Blend these ingredients until thoroughly combined.
  2. Set the vinaigrette aside to marinate for about 5 minutes.
Step 2: Combine Salad Ingredients
  1. In a large mixing bowl, add the rinsed and drained chickpeas, the diced English cucumber, halved cherry tomatoes, and thinly sliced red onion.
Step 3: Dress the Salad
  1. Pour the prepared vinaigrette over the salad mixture and gently toss everything together to ensure all ingredients are coated.
Step 4: Serve or Chill
  1. Serve immediately or let it chill in the refrigerator for about 30 minutes before serving.
