Step‑by‑Step Instructions
  1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat for 1-2 minutes until shimmering.
  2. Add 1 pound of sliced boneless, skinless chicken breast, seasoning with salt and pepper. Cook for 5-7 minutes until golden and fully cooked.
  3. Add 1 chopped onion, 4 minced garlic cloves, and 2 tablespoons of grated ginger. Sauté for 2-3 minutes until fragrant and onion is translucent.
  4. Pour in 6 cups of chicken broth and 2 cups of water. Raise heat to high and bring to a gentle boil for about 5 minutes.
  5. Add 2 sliced carrots and 1 diced bell pepper. Cook for 5 minutes until slightly softened, maintaining vibrant colors.
  6. Stir in 8 ounces of egg noodles or rice noodles. Cook according to package instructions, usually 5-7 minutes.
  7. About 2 minutes before noodles are finished, fold in 2 cups of chopped bok choy or spinach. Cook until wilted.
  8. Taste and adjust seasoning with salt and pepper as needed.
