Step-by-Step Instructions
  1. Preheat your Blackstone griddle or a large skillet over medium-high heat for about 3-5 minutes. Add 1 tablespoon of oil once hot.
  2. Add Yukon Gold potatoes and season with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for 10-12 minutes until golden brown and tender.
  3. Push the cooked potatoes to one side and add another tablespoon of oil. Brown the sliced smoked sausage for about 5 minutes.
  4. Add the chopped onion, red bell peppers, and zucchini. Stir and cook for another 5-7 minutes.
  5. Adjust seasoning if needed. Serve hot, garnished with fresh parsley.
